I took a recipe for biscuits and gravy from one of my favorite blogs to read, Vegan Pandamonium and had to try it, because this was seriously my favorite food - period - before going vegan and I've been trying and failing when it comes to making a good substitution. I didn't follow the recipe exact, as I used things I had around the kitchen. I used Pillsbury rolls (vegan!) instead of the Publix ones she used (is that a store???) I used Rice Milk instead of soy, and I used Lightlife Smart Grounds instead of the sausage substitute she used.

Godfather-Approved Easy, Cheesy Broccoli Alfredo

I'm pretty sure that the creamy alfredo sauce I concocted last night in my kitchen laboratory was so good even the Godfather himself would approve! And seriously folks, this is easier than mixing together that chalky mac n cheese powder with cold butter that we all grew up learning to love. Yes, it really is that simple!

Godfather-Approved Easy, Cheesy Broccoli Alfredo

1/4 c. Earth Balance or your favorite vegan butter
1/2 c. Tofutti Vegan Chive Cream Cheese
1-1/2 tsp. Garlic Powder
2/3 c. vegan milk (I use Rice)
1/2 c. Nutritional Yeast

While the noodles of your choice are cooking, melt the butter in a small saucepan on low heat. Once melted, whisk in the cream cheese until it is melted as well. Whisk in the garlic powder and milk and when everything is nicely combined, whisk in the nutritional yeast, whisking until it's combined well and thickening up a bit.

Steam up some of your favorite veggies (I used broccoli), drain your pasta (I use rice fettuccini) and toss it all together for a meal you'll want to write your Italian Grandmother about...even if, like me...you don't even have an Italian grandmother! Simple, delicious, and I promise, this will become a comfort food staple!

Salty Snacks and an Airport Stay...

What a weekend it has been! Between quick flights, doing the world-famous Chicago O'hare "Airport Dash", blizzards and ice...it was definitely a whirlwind! BUT, I have a great new stop I want to tell you all about if you're ever stuck and hungry at the Chicago O'Hare Airport.

My first stop at the airport this weekend, I had a few hours to kill between flights (NOT the same for my return-flight!) and as I was strolling from the F to the B Terminal, I happened along a little shop where my eyes *immediately* darted to the "Vegan" wording on their sign. Of course, being someone who never gives up an opportunity to check out a shop that caters to my lifestyle, I skipped right in! It was like a little slice of Heaven in such a hectic airport! Baskets of fresh organic fruits, fresh juices, raw nuts, and pre-made meals to write home about!


The market was called Cibo Express, and I picked up a massive meal of Buffalo Tofu Strips with vegan ranch dressing and a beautiful purple pear. My total with tax was under $8 for a HUGE meal...in airport prices, that's cheaper than a meal at McDonalds!! Healthy, filling, and cheap are all good things to me! They had so many things to choose from and now I know that if I ever have some time to kill at O'Hare (which, inevitably, I will!) I will definitely know where I'll be getting my grub on!



Since snacking is something that I tend to do more of when I'm traveling (does anyone else do this, or is it just me?!), having your own emergency snacks is always a great thing when you're in an airport that might not be as vegan-friendly as Chicago.


I recently got a package from a company based in the Northeast called Fastachi, and they sent me several of their insanely delicious nut mixes, all sold in re-sealable packaging, which is perfect for travel!



Nuts are great because they are an excellent source of so many important vitamins, nutrients, and healthy fats, and will definitely help fill you up when you have the urge to snack. The undisputed favorite flavor package that we were given to try in our house was the Wasabi Nut mix, followed closely by the Cranberry Nut mix. At a price that can't be beat for fresh and delicious nuts, I highly suggest heading over to the Fastachi website and checking out all the delicious goodies they have.



So....does anyone out there have any vegan-friendly airport favorites or snacks?!
