My 3-Day Kaeng Raeng Raw Vegan Cleanse!

If you're a reader of Alicia Silverstone's website, The Kind Life, then I'm sure you've seen her rave about the Kaeng Raeng system numerous times. Well, I am happy to say that, I was the winner of the last giveaway on her site, so I got to try the 3-Day Cleanse for free! Now, I'd been wanting to try this for a long time, but I'm wary of cleanses, mainly because so many of them are terribly unhealthy and very hard on your body. Upon receiving my system in the mail, I read all of the nutritional info, and was SHOCKED at how absolutely full of vitamins and nutrients this program was....to be honest, it was probably more nutritionally "full" than my daily diet is!

The packets were clearly labelled and you drank 3 a day, and could incorporate raw fruits and veggies into it as well. You could also mix the packets with non-dairy milks or juices for different tastes and such, which made this not feel like a "fast" or any other "cleanse" I'd ever been on. So, I stocked up on fruits and veggies, got my juicer ready to make some pure orange and apple juices to blend my mixes with.




Day 1:
I started my morning in a bit of a rush, so I wasn't able to juice. I mixed my first packet, which was the blueberry one, with ice and water and a banana and tossed it in the blender quick. Maybe it's my slight aversion to blueberries, but I was not a fan...HOWEVER, it did keep me extremely full...in fact, by the time lunchtime rolled around, I still had about a quarter of it left and I was STUFFED!

Lunchtime, I had the Mango Peach Pineapple pack, once again just mixed with ice and water. Now this one, I could get into! As full as I was from breakfast, I wanted the full effect of this so I really guzzled my 32 ounces down. I loved the fact that there were chunks of real fruit floating in my drink...it made it feel much more wholesome!

Dinner: For dinner, I had the raspberry and strawberry pack, and I blended it with some fresh strawberries, ice and water for a delicious, almost dessert-like, dinner. I went to bed completely full and not feeling like I was lacking a thing, and I didn't even have to supplement with additional foods, aside from the banana and strawberries!

Day 2:
I got through the blueberry smoothie much easier this morning after blending it with fresh orange juice. It is still my least favorite, which is why I continued to drink it in the morning, so I could "get it over with" essentially! I blended my lunch drink with orange juice as well for something a little different as well.

This day, I did get the munchies between lunch and dinner...probably more out of the need to "chew" on something, so I snacked on an apple and some carrots in between.

Dinner, I threw a banana into the mix and it was super delicious as well.

Day 3:
Day 3 was the hardest, as it was the day before my birthday, and I started dreaming of birthday cake...hahaha. But, I successfully made it through, with a banana, apple and carrot snack in between each "meal" and all blended with homemade OJ.

I woke up on day four feeling so much...cleaner, clear-headed, and rested...and the 4.6 pounds lost wasn't bad either! The great thing about it was the weight lost wasn't just "water weight" but it was all the toxic junk that was stored up in my body, because once I started eating again I didn't gain it back like you do with water weight. It stayed off and really did help me jump-start my weight loss!

Overall, I give the Kaeng Raeng 3-Day cleanse an A-, and the minus is only for the fact that I'm picky and didn't really care for the blueberry drink mix! I HIGHLY suggest this cleanse to anybody out there looking for something to detox their system with...so jump over to their website *here* and give it a shot!

So I've been drooling over an image over at VeganPandaMonium's blog for a while now, and while I had an excellent cheesecake recipe, I couldn't STAND the taste of Toffutti's cream cheese substitute. WELL, my grocery store finally started carrying the NEW cream cheese substitute made by Galaxy Nutritional Foods, so I figured it couldn't possibly be as nasty as Toffutti's, so I finally gave it a chance. Now, the idea for this cheesecake is definitely not original, but I used my cheesecake recipe instead of the one on Veganpandamonium's blog, just because I'm more familiar with the outcome. Just incorporated some of her smooth moves to make it pretty, and I must say this was probably one of the easiest, tastiest desserts ever. Seriously simple, and the Galaxy Cream Cheese substitute is not only amazing, but PERFECT for this recipe!


Huba-Huba Chococlate-Dipped Strawberry Cheesecake

16 ounces, or two tubs of Galaxy Non-Dairy Cream Cheese
1/2 cup agave nectar (or sugar)
2 tablespoons cornstarch
1 1/2 tablespoons lemon juice
1/2 teaspoon vanilla
1/4 cup cocoa powder
1 pie-crust (Danielle got lazy and bought a pre-made vegan one this time!)
Strawberries
Vegan Chocolate Chips

Preheat your oven to 350. Put the "cream cheese", agave nectar, lemon juice and vanilla in a blender and blend on low until smooth. Add in the cornstarch and blend until incorporated. Pour mixture into your piecrust, reserving about 1/4 to 1/3 of the batter. Add the cocoa powder to remaining batter and blend until incorporated. Pour into piecrust, and swirl together with a knife. Bake for 40-50 minutes, depending on your oven time, until the top is a golden color. Let sit for about an hour, then put in the refrigerator for a few hours before eating.



While cooling, melt down some chocolate chips in a double boiler (or, place a heat-resistant bowl over the top of a pan of water on medium heat). Slice the stems off your strawberries diagonally, making the heart-shaped top, then slice lengthwise, to get perfect strawberry hearts. Dip half in your melted chocolate and set on wax paper to cool. Add to your cheesecake as a garnish.

I went to visit my mother in Washington, D.C. this weekend. One of my favorite places to stop when I get there is the vegan bakery/cafe Sticky Fingers, which was actually just featured on the Food Network as they blazed through and won the Cupcake Wars, beating out non-vegan cupcake bakers and leaving them in their cruelty-free tracks! Little did I know that, while I was drooling over their counter deciding which cupcakes I wanted to try, my mother was at home, trying her hand for the first time at baking me vegan cupcakes, too! Needless to say, the house was full of these little treats when I got home!

Now, I have to give my mom props, because, for her first attempt at vegan cupcakes, they were probably the tastiest things she's ever made, and that's saying a lot considering my mom has been paid to make people's wedding cakes and other treats ever since I can remember! Amazing, light, fluffy, and oh so decadent, I felt I had to share the recipe she used here.

While at Sticky fingers, I had to try the cupcakes that won her Cupcake Wars, and those were equally as delicious! So, if you're in D.C., be sure to hit up Sticky Fingers! If you're not, then get in that kitchen and start baking this delicious recipe! I promise you won't be disappointed!!!!

A Vegan Hair Salon - Can it Be?!

Have you ever taken a trip to Target for toilet paper and ended up spending ten times as much as you should have? Then, when you get home and unpack your bags, discovering all the things your hands somehow snuck into your shopping cart you stumble upon that box of hair dye you bought? Excited, you rush to the bathroom and start mixing all those little bottles until the colors blend together and you pour this “stuff” all over your head without thinking twice about it. Your scalp starts to burn, your nose bleeds from the fumes, and you have to turn on every fan in your apartment because the stench of toxic chemicals is so overbearing that your cat has begun walking like someone who’s drunk in public? I know you know what I’m talking about. But seriously, does anybody REALLY know what their “natural” haircolor is anymore? I doubt it. We live in an age where looks and beauty and pampering yourself is in the forefront, and yes, even us vegans need to feel pretty! So what do we do? We KNOW that nearly all haircolors bought at Target or at your high-end salon are tested on animals, filled to the brim with harmful chemicals, and just plain aren’t GOOD for you. But you want to look and FEEL a certain way.


My hair color and/or cut changes with the moon phases. Seriously. It’s not a thing of vanity, but of self-expression for me. Being sick, there are many things about myself that I cannot change, but I still have control over my hair, so I express myself through it. And thank Mother Nature that I finally found a salon in Madison that caters to my need to express as well as my desire to be as eco-conscious as possible!




KODE Salon. Founded and owned by three of the most talented hair designers in the Midwest, and as someone who has lived coast to coast, I’d say in the country! You walk into the salon and just *know* that your experience here is going to be different from any other salon you’ve been to. From the hairstylist stations that were built from recycled barn floors, to the amazing nook the salon is nestled in in one of the coolest, most eco-friendly neighborhoods in Madison, to being tossed a beer as you walk in to wait for your appointment, this place has it going on!
KODE strives to source their resources as locally as possible, keeping money in the community.




The products that they use are not only vegan, but gluten-free, too! Now, out of sheer curiosity, I HAD to do some of my own research on this, because, well…I’m not good at taking things at face value. So I researched the brands and products they use and was so happy to see that, as far as a salon goes, this one is about as cruelty-free as it gets, folks! From Davines Haircolors, which even come in eco-friendly packaging on top of their cruelty-free stance and ingredients, to Surface styling products, which are all vegan and gluten-free and amazing in general!




But what about your HAIR? Does it look good when you leave? Let me just say, I’ve been to some of the most expensive and well-known hair stylists in the country and I have never left a salon more happy than when I left Kelly Z.’s amazing hands for the first time. The stylists spend massive amounts of time formulating a look that is not only 100% “you”, but one that is simple to maintain, grows out nicely, and a look that you will be more than happy about. I’ve only seen Kelly Z. when I go, as she’s my go-to-gal there, but I’ve seen the work the other stylists do and it’s also nothing short of awesomeness.




So, if you live in Madison and have been desperately searching for a place to get cut up, dyed out, or waxed off, then hit up KODE Salon. And afterwards, hop across the street to the best vegan restaurant in town, the Green Owl Café. Yes, it’s right across the street! I told you it’s located in the best neighborhood in town! Vegan Breakfast - Biscuits and "Sausage" Gravy!

I took a recipe for biscuits and gravy from one of my favorite blogs to read, Vegan Pandamonium and had to try it, because this was seriously my favorite food - period - before going vegan and I've been trying and failing when it comes to making a good substitution. I didn't follow the recipe exact, as I used things I had around the kitchen. I used Pillsbury rolls (vegan!) instead of the Publix ones she used (is that a store???) I used Rice Milk instead of soy, and I used Lightlife Smart Grounds instead of the sausage substitute she used.

Salty Snacks and an Airport Stay...

What a weekend it has been! Between quick flights, doing the world-famous Chicago O'hare "Airport Dash", blizzards and ice...it was definitely a whirlwind! BUT, I have a great new stop I want to tell you all about if you're ever stuck and hungry at the Chicago O'Hare Airport.

My first stop at the airport this weekend, I had a few hours to kill between flights (NOT the same for my return-flight!) and as I was strolling from the F to the B Terminal, I happened along a little shop where my eyes *immediately* darted to the "Vegan" wording on their sign. Of course, being someone who never gives up an opportunity to check out a shop that caters to my lifestyle, I skipped right in! It was like a little slice of Heaven in such a hectic airport! Baskets of fresh organic fruits, fresh juices, raw nuts, and pre-made meals to write home about!


The market was called Cibo Express, and I picked up a massive meal of Buffalo Tofu Strips with vegan ranch dressing and a beautiful purple pear. My total with tax was under $8 for a HUGE meal...in airport prices, that's cheaper than a meal at McDonalds!! Healthy, filling, and cheap are all good things to me! They had so many things to choose from and now I know that if I ever have some time to kill at O'Hare (which, inevitably, I will!) I will definitely know where I'll be getting my grub on!



Since snacking is something that I tend to do more of when I'm traveling (does anyone else do this, or is it just me?!), having your own emergency snacks is always a great thing when you're in an airport that might not be as vegan-friendly as Chicago.


I recently got a package from a company based in the Northeast called Fastachi, and they sent me several of their insanely delicious nut mixes, all sold in re-sealable packaging, which is perfect for travel!



Nuts are great because they are an excellent source of so many important vitamins, nutrients, and healthy fats, and will definitely help fill you up when you have the urge to snack. The undisputed favorite flavor package that we were given to try in our house was the Wasabi Nut mix, followed closely by the Cranberry Nut mix. At a price that can't be beat for fresh and delicious nuts, I highly suggest heading over to the Fastachi website and checking out all the delicious goodies they have.

My very first Bloom Cupcake...an experience I'll never forget!



I do have a lot of recipes to share with you all, but I am still wanting to give shout outs to all the yummy vegan goodies the man and me found around and about Wisconsin this weekend with his mother. One place that we took her to has been a favorite of ours for a few months now since discovering it. A vegan bakery. Need I say more?? Well, I’m gonna, because this place is unlike any vegan bakery I’ve ever been to.


Now, coming from Los Angeles, I was lucky enough to have many vegan options surrounding me daily. From local bakeries that baked up goodies sold at our Whole Foods out there to bakeries like BabyCakes, Sprinkles, and the like…there was definitely no shortage of vegan goodies in Los Angeles. BUT...although tasty…they all felt like they were missing…something.


A year later, we discovered Bloom Bake Shop…right around the corner from where I work. I was told about this new bakery from a co-worker, excited to tell me that although they had non-vegan items, that there were vegan and gluten free features each day as well. Of course, you say cupcake to me, and I’m there. So, I headed on down, and was greeted with the friendliest staff I have ever come across. My first vegan cupcake experience was one of the most ultimate decadence…a vanilla cupcake filled with orange marmalade…topped with a dark chocolate ganache and an orange buttercream frosting flower. I bit in, and went straight to cupcake heaven! THIS cupcake HAD what all the other ones didn’t…a touch of local love.


Bloom Bake Shop is a local, sustainable, fair trade bakery. Most of her ingredients come from right in this area…from the free range hormone-free eggs in her non-vegan products to the peanut butter used in some of her decadent treats all the way to the wind that powers her light fixtures…and what isn’t local is still fair-trade, pesticide and synthetics-free. Every inch of this little bakery is blooming (pun intended…haha) with love, and you can most certainly taste that love when you bite into these delicious, moist, dense vegan cupcakes.


So head on down to Middleton, just minutes from Madison, and pick up a box of cupcakes to share with your family, friends, co-workers…or keep them all for yourself (don’t worry, I won’t judge!). But definitely give this kind local business a try! You will not be disappointed! And the man's mother was in cupcake heaven, so take your out-of-town guests here too!!

Restaurant Review - Monty's Blue Plate Diner

This weekend the man’s mother was in town, and we ended up eating out much more than we usually do. HOWEVER, this gives me the chance to write some reviews on the vegetarian and vegan-friendly joints in Madison for those of you who live here or who may visit in the future. Anyway, the restaurant I’m reviewing today is one that we had gone to about a year ago, loved, but for some reason, haven’t been back since. Well, let me tell you, we will NOT be going this long again without paying a visit to Monty’s Blue Plate Diner. With their plethora of vegetarian and vegan fare, it’s really hard to not leave this place super stuffed and satisfied with vegan yumminess.

Now with Monty’s you don’t want to go there super-hungry. Go there when you are sorta-kinda hungry, because whether you go first thing in the morning or in the evening, there is ALWAYS a wait. This place is hugely popular, and if you go hungry, you’ll be absolutely famished by the time you are seated. So be prepared to wait, but be prepared to be more than satisfied with your meal as well. This place is DEFINITELY worth waiting for!

Now, their menu is not all vegetarian and vegan. BUT, it’s almost 100% local food, which is neat. And although this place is also a burger and bacon-lovers’ paradise, it’s also got a HUGE vegan menu and an even bigger vegetarian menu. The servers are also very knowledgeable about what can be veganized as well. I have had a vegan entrée before, but this time, since it was an early lunch, I wanted to try one of their breakfast options, served all day. And let me tell you, this was the BEST tofu scramble I have EVER had. And this is coming from a vegan who really hates tofu! You have to REALLY know what you’re doing with tofu to make me like it, and they have definitely won me over.

So, if you’re in Madison, I HIGHLY recommend this place! Check out Monty’s Blue Plate Diner…maybe I’ll see you there!

This was my yummy vegetarian hash made with diced potatoes, veggies and smoky tempeh. Can be served with two chicken fetuses (yuck!) or tofu scramble for no extra charge. Also served with a non-vegan biscuit, but you can sub toast (I got the rye toast and it was delicious!).


This was the man's tofu scramble and fried potatoes. He had the biscuit. How awesome do these dishes look?!






Veggie Burger Mecca in...Wisconsin??

Okay, so I had to break a few of my own rules last night, but let me just say, I’m BEYOND happy that I did! First off, I ate out twice in one day. Now mind you, I know vegan food carries much fewer calories and all the bad stuff that traditional restaurant food carries, but…it still isn’t good to eat out that much. BUT…the man’s momma is in town, we had lunch with her when she got into town, and then a late dinner after seeing his show. Which brings me to the second rule I broke…I ate WAY too late at night to be healthy (10:00…my usual rule is no eating after 7:00). REGARDLESS…I’m so glad I did, because if I hadn’t, I wouldn’t have experienced the BEST veggie burger I think I have ever had in my entire life. Seriously, it was almost like a religious experience for me as every bite took me closer and closer to food coma nirvana. So yes, I broke some rules, but now I have a new favorite hangout.


Los Angeles is usually seen as a vegan “mecca” of sorts…vegan restaurants on every corner, health food stores up the ass, and a boatload of people who understand and respect your lifestyle. However, step foot in an LA dive bar, and you’re S.O.L. I figured it would be the same in Wisconsin, you know, with all the beef and cheese curds this state consumes singlehandedly. But oh, how wrong I was! We ended up at a cute little dive last night called the Laurel Tavern after the man’s show…complete with a cozy fireplace and a “Cheers”-like atmosphere (seriously, everyone who walked into this place seemed to know everyone else there!).



I figured I’d be lucky if their French fries were vegan, because quite frankly, this looked like the kind of place where EVERYTHING would be deep fried in pig lard. I had already accepted the fact that my dinner would more than likely consist of a glass of water, when I opened the menu and saw quite a few safe bets! Surprised, when our server came to the table, I asked if the veggie burger was vegan, and she told me that it was…the only non-vegan thing would be that they butter the bun. Relieved, I went with the veggie burger with an unbuttered bun and waited, satisfied that I would be able to go to bed with some food in my tummy.


My homemade veggie patty arrived at the table, and I immediately got nervous…it looked like beef. I cut it in half, and realized that it was in fact a veggie burger, as a load of mushrooms fell out of the patty, as well as chunks of tvp (textured vegetable protein)…a SAFE place! I made my burger happy face with tomato head, pickle eyes and a mustard smiley face before applying my butterless bun, and dug in. Then, I proceeded to melt into the booth. I have NEVER been that satisfied by a simple veggie burger in all my life. And, for five bucks for this huge burger, you really can’t go wrong! Cheap bar food at it’s finest! I will most definitely be back, and I think that if you’re in Madison, you should most definitely give this little place a try…you won’t be sorry, I promise!

Went to Happy Hour on Friday to a cute little pub by my office called Byrd's Pub and Grill in Middleton. Let me just say, for a small town bar, this place has some yummy vegan options!!! I went with the Spicy Black Bean Wrap (no cheese) in the Garlic and Herb tortilla with their homemade waffle fries. Definitely not waistline friendly, but definitely delicious!! Their guacamole is superbly spicy and the black bean patty crumbled in the wrap is homemade and vegan to boot! So check this place out for great happy hour deals and for good vegan eats!! And check out some of the other yummy foods over at Vegan MoFo!!

Happy Herbivore's Chickpea Noodle Soup...Yes!

Sometimes, no matter how hard you wish for something, it just isn’t possible. Take this week, for example. I have wanted nothing more than to come home from work each night, grab a towel, and lay poolside through the sunset. Well, we’re supposed to get snow today, so like I said, sometimes your wishes just aren’t possible. ANYWAY, the cooler weather, if you haven’t noticed from my last couple recipes, puts me in serious soups, chilis, and desserts-mode. Last night, I was on a super tight schedule, since both the man and I were hungry, and we only had an hour from the time that we both got home until when he had to leave again, and I didn’t want him going to rehearsal on a cold night with nothing but a pb&j in his belly!

So, we looked through the pantry, and I realized that we had all the ingredients for one of my favorite soups by one of my favorite food bloggers, Happy Herbivore!! Not only that, but it’s one of the QUICKEST soups you can possibly put together, it’s super hearty and filling, and it just plain warms the soul! I took the recipe and added a bag of frozen mixed veggies to it since we didn’t have any mushrooms (the frozen mixed veggies were totally our lizard’s food, but he didn’t mind! [and yes, I do realize it’s absurd to feed a lizard organic Trader Joes frozen veggies, but he’s spoiled…don’t judge me!]). The best thing about big pots of soup like this is that you can jar it up and have it for lunches the rest of the week…yummy! Now, on to the recipe!

Chickpea Noodle Soup by Happy Herbivore
1 whole carrot, skinned
2 whole celery stalks, sliced
1 small onion, diced
10 whole cremini (brown) mushrooms (we subbed the frozen mixed veggies)
8 cups vegetable broth
1 tsp yellow miso paste
1 tsp tamari
2 whole bay leaf
4 ounces whole wheat pasta, uncooked
15 ounces chickpeas, drained and rinsed

Instructions:
Line a large soup pot with broth, about 1/4 cup. Add carrots, celery and onion and saute over high heat until onions are translucent, about 3 minutes.

Add mushrooms and more broth if necessary. Continue to cook over high heat until the mushrooms are soft, about 3 minutes. Add remaining broth, bay leaves, miso and tamari. Cover and bring to a boil. Once boiling, add pasta and reduce heat to medium. Cook for another 6 minutes, or until pasta is al dente (adjust time accordingly). Stir in chickpeas and taste test. Add more miso or salt if necessary or desired. Allow soup to thorougly heat the chickpeas. Fish out bay leaves and serve.



I didn't get to feel the sun on my face lying poolside, but I did get to enjoy the warmth and goodness of this soup deep in my soul!

Restaurant Review: Cafe Costa Rica

Yesterday was World Vegan Day, and instead of cooking a super delicious vegan meal, I carted my lazy ass to a restaurant! Okay, so I’d actually been wanting to try this place for a while, and heard they had some pretty awesome stuff, and wanted to support a local restaurant that catered to the vegan crowd. So, the man and myself travelled downtown to visit a restaurant so cute and tiny that if you blink, you just may miss…so keep your eyes peeled for this one!

It’s called the Café Costa Rica, and it’s literally in the basement of an old house with two tables outside, and three tables inside. You walk inside, and the smells are deliciously overpowering. You’re greeted by a friendly hello, and asked if you want to sit inside or outside (outside?? It’s like, 35 degrees outside! Do you real Wisconsin folk really still sit outside when it’s that cold?! Sheesh!) We took the small corner table and were handed menus that were nothing more than a piece of paper that looked like it had been laminated like, 20 years ago. The menu was entirely meat…steak, chicken, pork, veal, fish. Oh boy…maybe we went to the wrong place. Wait! At the very bottom of the menu in small print it said, “Can make any meal vegetarian/vegan. Please ask your server.” My first thought was, how the hell do you make veal vegan?! But, when our server arrived at the table, I obviously asked, how can you make these meals vegan? Our server then began to describe how they can “veganize” any option you would like. For example, they can marinate tofu steaks in the sauce the veal is made with, or use patacones in substitution for any meat on the plate (patacones are fried green plantains). As soon as our server mentioned the patacones substitution, I immediately began to salivate. I ordered the Burrito but stuffed with patacones instead of beef and no cheese. The man ordered a jerk marinated tofu steak. And we sat, anxiously awaiting our food.

To say we were please with the outcome would be an understatement. For one, my burrito was bigger than my thigh (and this chubby latina vegan has some serious thighs!) and the aromas were enough to make me sing out loud. Then, we got down to the real test…the taste. All my wildest fantasies seemed to come true in that very moment. It was honestly the best meal I have had in AGES. The man cleaned his plate. I have lunch for two days now.


Overall, I’d give this place a 9/10 (no parking makes it lose a point, which is going to be difficult for when it gets snowy!). We will definitely be back, and if you are a Dairyland Vegan like myself, I HIGHLY recommend Café Costa Rica!

Apple Crisp and Pizza...Sounds Like Perfection to Me!

This weekend was packed full of Autumn fun and adventures…from trying new restaurants to carving pumpkins to seeing the beautiful Fall Harvest at the Farmers Market…it was all amazing!

Saturday started with an early morning trip to the Farmers Market, which is my ultimate favorite way to start my Saturdays! Honestly, the fall colors on every table were enough to give me butterflies in my stomach I was so giddy! I got some incredible spaghetti squash and butternut squash. I also got some pie pumpkins and apples that looked like they were Heaven-sent! Obviously, dinner was going to be spaghetti squash, and I just KNEW I had to make an apple-something for dessert!

So, I began perusing The Kind Life forums for a good apple recipe, specifically one that I could make gluten-free, as I’m trying to see if eliminating gluten (or drastically reducing the amount I eat) will help with my thyroid issues, but I digress. I found a really yummy looking recipe posted by Tina Weiss that I had all the ingredients for and just knew I had to try. Needless to say, it was absolutely delicious! So, here is the recipe:

Autumn Harvest Apple Crisp
4 medium apples, peeled, cored, and sliced thin
1/2 cup raisins (optional)
1/2 cup brown sugar
1/2 cup flour (to make gluten-free, I used rice flour)
3/4 cup oats (I used Bob’s Red Mill Gluten-Free Oats)
1/3 cup Earth Balance
1/2 cup slivered almonds [(optional) I did not use this as I am allergic, but it was in the original recipe]
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg or pumpkin pie spice

Heat oven to 375. Spray 8x8 dish with cooking spray.

Spread apples and raisins (if using) in pan.

In a large bowl, mix all dry ingredients.

Add Earth Balance, and mix with hands, rubbing together until Earth Balance is well incorporated. Sprinkle over apples.

Bake 30 minutes or until apples are tender.

I served this piping hot over Rice Dream Vanilla Ice Cream – Perfecto!


Since Sunday was the beginning of World Go Vegan Week, the man and myself decided to try one of the Madison restaurants participating that we had not yet been to, to scope out the vegan options. We went to Roman Candle Pizzeria, of which they have a couple locations in the Madison area. We went to the one in Middleton, as it’s closest to where we live. I must say, for a pizza place, I was HIGHLY impressed! Our server was fabulous, and when we mentioned the Vegan Week specials ($3 off any size vegan pizza) he recommended the “Animal Lovers” pizza with no cheese. We went for it, and added some green olives (seriously, how can you eat pizza without green olives?!) and continued looking through their menu. Seriously, this place had probably near 20 different vegetables to put on a pizza as options!! Definitely not like any other pizza place I’ve been to!

Anyway, our pizza arrived, and it was beautiful!

The big fresh basil leaves, perfectly sliced thin red peppers, broccoli, and lots of other veggies tossed perfectly on a super flavorful sauce and then lightly drizzled with olive oil. The pizza literally disappeared before our eyes! Our server was also very excited to see us order something vegan, and was asking us a lot of questions. He thought our pizza looked really good, even though it didn’t have any cheese on it (he said he never sees that…of course not in Wisconsin!) and said he may try it for his lunch that day! He was also excited to hear we liked it, so he can tell other people about the vegan specials they have this week…holla veganism!! Hahaha…so yes, if you are in the Madison area, I will highly recommend Roman Candle Pizzeria if you are looking for a vegan pizza fix!

Hooping through the Ages - Fitness Review

Imagine. It’s 1955. Bill Haley and the Comets’ “Rock Around the Clock” starts whistling through the jukebox at the diner, and all the cheerleaders and their quarterback boyfriends can’t help but take one last sip of that strawberry malt before getting up to boogie. Waitresses bust out their hula hoops, climb on the tables, and a party that’s the bees knees starts bumping out…but ends at a respectable time, of course.

I have to admit, when I first heard about hula hooping for weight loss, this was the image that popped into my head (yes, I probably watch WAY too many movies for my own good!). I didn’t honestly think that my favorite childhood toy could actually be a tool to whittle down my waistline. But, in all actuality, it really is one hell of a rockin’ workout!

I first started “hooping” a couple of years ago. I used to be a nanny/tutor for a young girl who had such severe allergies that she was not even able to leave her home, and survived on a diet of hormone-free ground beef, corn, bosc pears (allergic to the rest) and egg/dairy free spelt pancakes/bread/anything else you could make with spelt, water and soymilk. Her allergies were so severe that she couldn’t even leave the house to play outside or go to school, which broke my heart, but her mother had set up quite the play area for her inside. One of her favorite things to do was hula hoop, like most 10 year-old girls, and they also had an “adult-sized” hoop that her mom or I could use. We started having contests to see who could keep their hoop up the longest, and this would sometimes we’d still be going strong after 30, 45, 50 minutes, upwards of an hour! When one of us would finally cave, we’d be sweaty, but not tired, and even felt more energized! Cut to the next day and Holy Hell were my abs paying the price! After a couple of weeks of these random competitions through the day, I started doing some online research.

Turns out, “hooping”, as it’s called in fitness circles, was beginning to show up in gyms across the country as a great way to shed inches, get that heart rate up, and get the blood flowing with super-low impact, and a whole lot of fun (I mean, who can’t help but smile and reminisce on their innocent and fun childhood toy when hooping?!)

Cut to now, two years later. I have my own “weight-loss hoop” that cost a mere 30 bucks. It weighs 3 pounds (I’ve graduated from the 5 pound hoop [the more the hoop weighs, maxing out at 5 pounds, the easier it is to keep up]) and is considerably larger than the hoops we used when we were kids. It’s something that takes up little space (fits in the closet), and something that you can do while watching your favorite tv shows after a long day of work. The best thing about it is, I honestly don’t feel like I’m exercising! Hooping burns up to 100 calories every TEN MINUTES, which is more than the treadmill, and much nicer on your joints (which is good if you’re someone like me, who has very sensitive joints). I make a point to hoop between 40-60 minutes a night, which realistically, is one tv show. Instead of letting my ass form to the sofa as it gradually expands, I’m up and doing something about it! And according to Hoopnotica.com, hooping consistently does the following:

Provides an intense cardiovascular workout

Increases energy
Develops balance and coordination
Increases flexibility

Mental/Emotional Benefits:
Clears and quiets the mind

Opens up creative self expression

Seriously? Swinging a hoop around your hips does all THAT?!?! I can honestly say that, yes, it does. Now, I’m not going to lie. I have not lost weight doing this. HOWEVER, I have a very severe disorder, and essentially, my metabolism is literally dead. Most people with levels like mine in my condition gain on average, 3-5 pounds a month on a restricted-calorie diet with 3-5 days of exercise a week. And between hooping and my Biggest Loser for Wii Fit, I have maintained my weight, which basically means that anybody who does not share my condition WILL lose weight and whittle down your waist by doing this. The fact that I’ve been able to maintain my weight for almost a year now (and even lose 5 pounds this year, which is nothing to most people, but HUGE for someone with my disorder), so clearly, it’s doing something for me. It’s also increased my energy and stamina, which was something that I didn’t think I’d ever have again. I HIGHLY recommend hooping to everyone out there, whether you need to lose weight, or whether your just looking for something fun to lift your spirits a little bit.


I LOVE using my hoop to stretch before and after using it. It stretches muscles I was never able to properly stretch before!

So, what does this have to do with a vegan diet, you ask? Well, if you want to get super analytical, I suppose nothing. But I truly believe that the more you get up and move, the better you feel, and the easier it is to make good healthy choices in all aspects of your life. I know that I feel better about myself when I move a bit, and it also keeps me focused on what I put into my body. Plus, being vegan, I believe, is about being good to your fellow living beings, your mother earth, and yourself and getting yourself moving is honouring your body, and thanking it for being that vessel of power. So hoop on!

Vegan Jambalaya on World Vegetarian Day

Yesterday was World Vegetarian Day, and let me just say that I stimulated the crap out of the vegetarian economy, that's for sure!! I got not one but TWO new pairs of super cute vegan shoes from ShoeDazzle, got some vegan cupcakes for the office at Bloom Bake Shop, which were a hit, as always, and then when I got home from work, I wanted to go to my favorite vegan restaurant, the Green Owl Cafe. Now, I've eaten at a lot of really good vegan restaurants. Julian and I would go to them all the time in Los Angeles, but none of them can hold a candle to Green Owl, in my opinion! Their servers are always the absolute sweetest, their foods are unique and filling, and don't even get me started on their amazing desserts!!!

So we headed to Green Owl last night, and I was determined to try something different, while Julian was already content with the fact that he would be getting the exact same thing he always does, but he was really looking forward to their apple crisp, which is one of his favorites.

We get there and are seated in the back area, which is our favorite and took a look at the menu. And waited. And waited. And waited some more. A table was sat right next to us, and greeted right away. And we waited some more while all the waitstaff looked right at us and walked by. After 10 minutes, the people seated after us already had their drinks and salads, and we hadn't even been aknowledged. And I was hungry! I finally went up to the front and asked for some service, which, after a few more minutes, we finally got. Then, the special that I wanted was sold out, which made me sad, but I tried the vegan jambalaya instead, and I'm very glad I did! Every course took a very long time to receive (20 minutes for a dip platter, 40 for soup and salad, and an hour for our main course), but as always, neither of us had a single bad thing to say about the food! My jambalaya was absolutely delicious! It was so flavorful and filling, and it came with the most delicious roasted red pepper cornbread. And my Mediterranean Bean and Orzo soup was awesome as well...no suprise there. By the time dessert rolled around, we'd already been there two and a half hours now, and had missed the movie we planned on seeing, so we skipped dessert for the first time in our Green Owl history, and just went home...we figured if we stayed it may end up being another hour...hahaha!

But, although this was by far our worst service experience here, the food will no doubt keep us coming back for more...and more...and more!!

Hello blogosphere! Sorry it’s been a hot minute since I’ve updated, but it’s just one of those weeks where you’re pulled in 500 different directions, ya dig?! Anyway, I wanted to share a pretty rad story with all of you, while letting you know about a freaking amazing vegan product. If you haven’t heard of her already, than now you will, and I would HIGHLY suggest getting up close and personal with the amazing products of Susan Nichole. Not only are her bags of the finest quality, but this is definitely one of the most “kind” businesses I have ever come across…not only to the customers, but to the world. I clearly remember a Saturday in Oak Harbor, Washington in 1970 when I was 9 years old walking to the dime store to buy my weekly 45 record (3-Dog Night…just sayin), when I stopped dead in my tracks at a display window in our only shoe store in town. There was a light brown suede purse, with colored suede appliqué of a desert scene. The sky opened and I literally heard angels sing. A week later, after many odd jobs…it belonged to me. That purse started my love affair with bags that has never wavered in the 40 years since that day.

My closet’s built-in shelves hold one of a kind Dior, Choo, Gucci, and Furla bags to name a few. I hold more equity in these bags than I do in my home. I can spot a cheap bag or a fake at 500 feet.

I am not a Vegan or Vegetarian. (Had to look up how to spell vegetarian….) But, this year I have started paying more attention to the amounts and source of the meat and fish I choose to consume. My daughter, a Vegan, has educated me on the importance of locally and humanly raised meat. I only shop at markets where meats are locally and organically grown. No factory farms. I buy fish after checking the Sustainable Fish List (which changes weekly, btw.) No fish farms where fish are fed dangerous corn pellets, breaking every law of nature.


I feel good. I feel proud, until I wander into my Mecca. My Church. The Versace Store. As I lovingly hold (hug) a bag that literally brings tears to my eyes, the genetically altered (because she’s impossibly beautiful and airbrushed) shop girl says, “Isn’t that leather just like butter?” I stopped in my tracks. All the arguments of leather being a bi-product of the meat industry, ie.; factory farms, roared in my head. By purchasing this bag…I am still supporting factory farms. Even though the farm was Italian…it was still a factory farm. I could not guarantee that the animals were humanely raised and killed. I felt sick.

My daughter had once told me about Susan Nichole Handbags. A grassroots, cottage based company that designs, creates and sells 100% vegan bags. I “friended” them on Facebook to support my daughter, but never really paid attention. But after this experience, I ordered one. $65? Are you serious? If I didn’t like it, I would put it in the Christmas closet for Danielle. (sorry honey). I also ordered a bag from Shoe Dazzle, claiming all man made materials. ($39.95) The Shoe Dazzle came first, and I looked and looked at it. Not bad. Took it to Starbucks on a weekend…I was asked if it was the new Jimmy Choo! My real Jimmy Choo ($2795.00)…never gets attention like that! When my Susan Nichole bag arrived….I kept it near me for three days. Talk about butta? This is a gorgeous, gorgeous bag! I have a few SN Bags now and they sit proudly next to their Italian, less humane cousins.

In my research of vegan friendly bags, I’ve found many mainstream companies and designers have started vegan lines of business. My daughter and I agree to disagree on the merits of these companies. Susan Nichole ventured out to make humane and fashionable bags as their core line of business. Not a side line, but the life line of this integrity and quality driven company. My daughter, Danielle and this company have changed my philosophy not only on my food consumerism, but my fashion consumerism. There are many companies like Susan Nichole Handbags who are out there doing the right things, for the right reasons. I’m honored to carry their bags and to support them.

Recipe Blast from the 21-Day Kickstart!

Today marks day 5 of PCRM’s 21-Day Vegan Kickstart…and I’m LOVING it!! Every single recipe, even the ones that I honestly thought I’d hate (especially never particularly enjoying Black Eyed Peas) have all been fabulous! Now, some people do the program to get into veganism for the first time, and others do it for new recipe ideas but not to really follow the plan. I’m doing this to see if this plan really does “kickstart” my weight loss as I have heard that it can. Well, I haven’t done a weigh-in yet, but I did slide my “skinny” jeans on with ease today…and to think, I haven’t even been able to pull them over my ass for over a year now! It’s like going shopping in my own closet! So anyway, I’m linking to all of the fabulous recipes that I’ve tried so far this week so you can all give them a shot. Cous Cous Confetti Salad
I'm not a fan of raw veggies in a hot dish like this calls for, but this was suprisingly delicious! As I type this, I'm currently eating the last of it in a hot pita for lunch...yummm....


Hoppin' John Salad
I was hesitant to try this one, considering I've always had an aversion to black eyed peas...but it was really good as well! And super filling! I couldn't even finish one serving size!

Carrot and Red Pepper Soup
I didn't take a picture because well...it just looked like a bowl of tomato soup...and we all know what that looks like! This soup was so yummy and warmed me to the core...did just the job a soup was supposed to do. It was a perfect pairing with the Confetti Cous Cous, too!

Southern Beans and Greens
I made this recipe with the leftover Hoppin' John Salad (just threw it all in!), Kidney Beans and Navy Beans. It was perfect! The perfect savory dish on a day that seemed all too chilly for early September!

All in all, I highly recommend all the recipes so far...give them a try, and let me know how you like them!
