My 3-Day Kaeng Raeng Raw Vegan Cleanse!

If you're a reader of Alicia Silverstone's website, The Kind Life, then I'm sure you've seen her rave about the Kaeng Raeng system numerous times. Well, I am happy to say that, I was the winner of the last giveaway on her site, so I got to try the 3-Day Cleanse for free! Now, I'd been wanting to try this for a long time, but I'm wary of cleanses, mainly because so many of them are terribly unhealthy and very hard on your body. Upon receiving my system in the mail, I read all of the nutritional info, and was SHOCKED at how absolutely full of vitamins and nutrients this program was....to be honest, it was probably more nutritionally "full" than my daily diet is!

The packets were clearly labelled and you drank 3 a day, and could incorporate raw fruits and veggies into it as well. You could also mix the packets with non-dairy milks or juices for different tastes and such, which made this not feel like a "fast" or any other "cleanse" I'd ever been on. So, I stocked up on fruits and veggies, got my juicer ready to make some pure orange and apple juices to blend my mixes with.




Day 1:
I started my morning in a bit of a rush, so I wasn't able to juice. I mixed my first packet, which was the blueberry one, with ice and water and a banana and tossed it in the blender quick. Maybe it's my slight aversion to blueberries, but I was not a fan...HOWEVER, it did keep me extremely full...in fact, by the time lunchtime rolled around, I still had about a quarter of it left and I was STUFFED!

Lunchtime, I had the Mango Peach Pineapple pack, once again just mixed with ice and water. Now this one, I could get into! As full as I was from breakfast, I wanted the full effect of this so I really guzzled my 32 ounces down. I loved the fact that there were chunks of real fruit floating in my drink...it made it feel much more wholesome!

Dinner: For dinner, I had the raspberry and strawberry pack, and I blended it with some fresh strawberries, ice and water for a delicious, almost dessert-like, dinner. I went to bed completely full and not feeling like I was lacking a thing, and I didn't even have to supplement with additional foods, aside from the banana and strawberries!

Day 2:
I got through the blueberry smoothie much easier this morning after blending it with fresh orange juice. It is still my least favorite, which is why I continued to drink it in the morning, so I could "get it over with" essentially! I blended my lunch drink with orange juice as well for something a little different as well.

This day, I did get the munchies between lunch and dinner...probably more out of the need to "chew" on something, so I snacked on an apple and some carrots in between.

Dinner, I threw a banana into the mix and it was super delicious as well.

Day 3:
Day 3 was the hardest, as it was the day before my birthday, and I started dreaming of birthday cake...hahaha. But, I successfully made it through, with a banana, apple and carrot snack in between each "meal" and all blended with homemade OJ.

I woke up on day four feeling so much...cleaner, clear-headed, and rested...and the 4.6 pounds lost wasn't bad either! The great thing about it was the weight lost wasn't just "water weight" but it was all the toxic junk that was stored up in my body, because once I started eating again I didn't gain it back like you do with water weight. It stayed off and really did help me jump-start my weight loss!

Overall, I give the Kaeng Raeng 3-Day cleanse an A-, and the minus is only for the fact that I'm picky and didn't really care for the blueberry drink mix! I HIGHLY suggest this cleanse to anybody out there looking for something to detox their system with...so jump over to their website *here* and give it a shot!

Spicy Buffalo Tempeh Salad with "Bacon-Ranch" Dressing

So last week, the sun was finally shining, the snow was finally melting, and it was really beginning to feel like Spring. Today is not one of those days, but I thought I’d share a yummy recipe that is delicious on a warm spring or summer day with you all!


Now I don’t know about you, but I crave different things depending on the weather. I made stew last night because it was cold and snowy, but when it’s warm and sunny, I crave cold things, like salads. I threw this salad together using some of my favorite Lightlife products, and a tempeh recipe from my favorite cookbook, Appetite for Reduction. I really like also that the author gives you all of the nutritional information on the food. This salad is not only delicious, but each serving comes in at just under 300 calories….when have you EVER had a salad with Ranch Dressing, Bacon, and Buffalo Protein that came in at so little?! Never! So give this one a shot, you won’t be disappointed. Here we go!


Spicy Buffalo Tempeh Salad with “Bacon-Ranch” Dressing


For the Tempeh:


1/2 cup Organic Vegetable Broth
1/2 cup Red Hot Cayenne Pepper Sauce (I used Franks Hot Sauce)
6 Cloves of Garlic
2 tsp Dried Oregano
8 oz Tempeh (I used Lightlife’s awesome tempeh)



Cut tempeh into smaller pieces (cookbook suggests 8 wedges).



Steam tempeh for 5 minutes.

Mix together the marinade ingredients in a medium mixing bowl.

When tempeh is done, immediately transfer to marinade for 10 - 60 minutes.

Preheat large skillet over medium-high heat. Spray the pan with a bit of non-stick cooking spray. Add tempeh and reserve marinade. Cook the tempeh for 10 minutes, flipping often, until it has browned a bit.
Add the remaining sauce and turn up the heat to high. Let the liquid boil and cook down for about 5 minutes.



For the Bacon:

4 strips of Lightlife Smart Bacon
Oil or spray for the pan
Liquid Smoke

Lightly oil or spray a small skillet and let it heat up a bit. Lay down the bacon strips and give each strip a few shakes of liquid smoke. After a few minutes, flip your bacon, and give the other side a few shakes of the liquid smoke. Cook until crispy. Allow to cool, then break apart into tiny pieces.


Now, I added the “Bacon Bits” to my own “Ranch” dressing, and shook it up so the bacon mixed in well. I tossed a salad of romaine, spinach, cucumbers, tomatoes, olives, and fried onions with the dressing, then topped with my buffalo tempeh. I really wish I had a picture of it, but I was so excited at how good it looked and smelled that I dug right in without even thinking about taking a shot! BUT, if you want to see how good it looked, make it for yourself, and see how awesome it looks/tastes/smells. The recipe looks like a ton of steps, but it’s really simple, so don’t be too overwhelmed by the amount of steps!

Have you ever taken a trip to Target for toilet paper and ended up spending ten times as much as you should have? Then, when you get home and unpack your bags, discovering all the things your hands somehow snuck into your shopping cart you stumble upon that box of hair dye you bought? Excited, you rush to the bathroom and start mixing all those little bottles until the colors blend together and you pour this “stuff” all over your head without thinking twice about it. Your scalp starts to burn, your nose bleeds from the fumes, and you have to turn on every fan in your apartment because the stench of toxic chemicals is so overbearing that your cat has begun walking like someone who’s drunk in public? I know you know what I’m talking about. But seriously, does anybody REALLY know what their “natural” haircolor is anymore? I doubt it. We live in an age where looks and beauty and pampering yourself is in the forefront, and yes, even us vegans need to feel pretty! So what do we do? We KNOW that nearly all haircolors bought at Target or at your high-end salon are tested on animals, filled to the brim with harmful chemicals, and just plain aren’t GOOD for you. But you want to look and FEEL a certain way.


My hair color and/or cut changes with the moon phases. Seriously. It’s not a thing of vanity, but of self-expression for me. Being sick, there are many things about myself that I cannot change, but I still have control over my hair, so I express myself through it. And thank Mother Nature that I finally found a salon in Madison that caters to my need to express as well as my desire to be as eco-conscious as possible!




KODE Salon. Founded and owned by three of the most talented hair designers in the Midwest, and as someone who has lived coast to coast, I’d say in the country! You walk into the salon and just *know* that your experience here is going to be different from any other salon you’ve been to. From the hairstylist stations that were built from recycled barn floors, to the amazing nook the salon is nestled in in one of the coolest, most eco-friendly neighborhoods in Madison, to being tossed a beer as you walk in to wait for your appointment, this place has it going on!
KODE strives to source their resources as locally as possible, keeping money in the community.




The products that they use are not only vegan, but gluten-free, too! Now, out of sheer curiosity, I HAD to do some of my own research on this, because, well…I’m not good at taking things at face value. So I researched the brands and products they use and was so happy to see that, as far as a salon goes, this one is about as cruelty-free as it gets, folks! From Davines Haircolors, which even come in eco-friendly packaging on top of their cruelty-free stance and ingredients, to Surface styling products, which are all vegan and gluten-free and amazing in general!




But what about your HAIR? Does it look good when you leave? Let me just say, I’ve been to some of the most expensive and well-known hair stylists in the country and I have never left a salon more happy than when I left Kelly Z.’s amazing hands for the first time. The stylists spend massive amounts of time formulating a look that is not only 100% “you”, but one that is simple to maintain, grows out nicely, and a look that you will be more than happy about. I’ve only seen Kelly Z. when I go, as she’s my go-to-gal there, but I’ve seen the work the other stylists do and it’s also nothing short of awesomeness.




So, if you live in Madison and have been desperately searching for a place to get cut up, dyed out, or waxed off, then hit up KODE Salon. And afterwards, hop across the street to the best vegan restaurant in town, the Green Owl Café. Yes, it’s right across the street! I told you it’s located in the best neighborhood in town! Salty Snacks and an Airport Stay...

What a weekend it has been! Between quick flights, doing the world-famous Chicago O'hare "Airport Dash", blizzards and ice...it was definitely a whirlwind! BUT, I have a great new stop I want to tell you all about if you're ever stuck and hungry at the Chicago O'Hare Airport.

My first stop at the airport this weekend, I had a few hours to kill between flights (NOT the same for my return-flight!) and as I was strolling from the F to the B Terminal, I happened along a little shop where my eyes *immediately* darted to the "Vegan" wording on their sign. Of course, being someone who never gives up an opportunity to check out a shop that caters to my lifestyle, I skipped right in! It was like a little slice of Heaven in such a hectic airport! Baskets of fresh organic fruits, fresh juices, raw nuts, and pre-made meals to write home about!


The market was called Cibo Express, and I picked up a massive meal of Buffalo Tofu Strips with vegan ranch dressing and a beautiful purple pear. My total with tax was under $8 for a HUGE meal...in airport prices, that's cheaper than a meal at McDonalds!! Healthy, filling, and cheap are all good things to me! They had so many things to choose from and now I know that if I ever have some time to kill at O'Hare (which, inevitably, I will!) I will definitely know where I'll be getting my grub on!



Since snacking is something that I tend to do more of when I'm traveling (does anyone else do this, or is it just me?!), having your own emergency snacks is always a great thing when you're in an airport that might not be as vegan-friendly as Chicago.


I recently got a package from a company based in the Northeast called Fastachi, and they sent me several of their insanely delicious nut mixes, all sold in re-sealable packaging, which is perfect for travel!



Nuts are great because they are an excellent source of so many important vitamins, nutrients, and healthy fats, and will definitely help fill you up when you have the urge to snack. The undisputed favorite flavor package that we were given to try in our house was the Wasabi Nut mix, followed closely by the Cranberry Nut mix. At a price that can't be beat for fresh and delicious nuts, I highly suggest heading over to the Fastachi website and checking out all the delicious goodies they have.

Restaurant Review - Bloom Bake Shop

My very first Bloom Cupcake...an experience I'll never forget!



I do have a lot of recipes to share with you all, but I am still wanting to give shout outs to all the yummy vegan goodies the man and me found around and about Wisconsin this weekend with his mother. One place that we took her to has been a favorite of ours for a few months now since discovering it. A vegan bakery. Need I say more?? Well, I’m gonna, because this place is unlike any vegan bakery I’ve ever been to.


Now, coming from Los Angeles, I was lucky enough to have many vegan options surrounding me daily. From local bakeries that baked up goodies sold at our Whole Foods out there to bakeries like BabyCakes, Sprinkles, and the like…there was definitely no shortage of vegan goodies in Los Angeles. BUT...although tasty…they all felt like they were missing…something.


A year later, we discovered Bloom Bake Shop…right around the corner from where I work. I was told about this new bakery from a co-worker, excited to tell me that although they had non-vegan items, that there were vegan and gluten free features each day as well. Of course, you say cupcake to me, and I’m there. So, I headed on down, and was greeted with the friendliest staff I have ever come across. My first vegan cupcake experience was one of the most ultimate decadence…a vanilla cupcake filled with orange marmalade…topped with a dark chocolate ganache and an orange buttercream frosting flower. I bit in, and went straight to cupcake heaven! THIS cupcake HAD what all the other ones didn’t…a touch of local love.


Bloom Bake Shop is a local, sustainable, fair trade bakery. Most of her ingredients come from right in this area…from the free range hormone-free eggs in her non-vegan products to the peanut butter used in some of her decadent treats all the way to the wind that powers her light fixtures…and what isn’t local is still fair-trade, pesticide and synthetics-free. Every inch of this little bakery is blooming (pun intended…haha) with love, and you can most certainly taste that love when you bite into these delicious, moist, dense vegan cupcakes.


So head on down to Middleton, just minutes from Madison, and pick up a box of cupcakes to share with your family, friends, co-workers…or keep them all for yourself (don’t worry, I won’t judge!). But definitely give this kind local business a try! You will not be disappointed! And the man's mother was in cupcake heaven, so take your out-of-town guests here too!!

Restaurant Review - Monty's Blue Plate Diner

This weekend the man’s mother was in town, and we ended up eating out much more than we usually do. HOWEVER, this gives me the chance to write some reviews on the vegetarian and vegan-friendly joints in Madison for those of you who live here or who may visit in the future. Anyway, the restaurant I’m reviewing today is one that we had gone to about a year ago, loved, but for some reason, haven’t been back since. Well, let me tell you, we will NOT be going this long again without paying a visit to Monty’s Blue Plate Diner. With their plethora of vegetarian and vegan fare, it’s really hard to not leave this place super stuffed and satisfied with vegan yumminess.

Now with Monty’s you don’t want to go there super-hungry. Go there when you are sorta-kinda hungry, because whether you go first thing in the morning or in the evening, there is ALWAYS a wait. This place is hugely popular, and if you go hungry, you’ll be absolutely famished by the time you are seated. So be prepared to wait, but be prepared to be more than satisfied with your meal as well. This place is DEFINITELY worth waiting for!

Now, their menu is not all vegetarian and vegan. BUT, it’s almost 100% local food, which is neat. And although this place is also a burger and bacon-lovers’ paradise, it’s also got a HUGE vegan menu and an even bigger vegetarian menu. The servers are also very knowledgeable about what can be veganized as well. I have had a vegan entrée before, but this time, since it was an early lunch, I wanted to try one of their breakfast options, served all day. And let me tell you, this was the BEST tofu scramble I have EVER had. And this is coming from a vegan who really hates tofu! You have to REALLY know what you’re doing with tofu to make me like it, and they have definitely won me over.

So, if you’re in Madison, I HIGHLY recommend this place! Check out Monty’s Blue Plate Diner…maybe I’ll see you there!

This was my yummy vegetarian hash made with diced potatoes, veggies and smoky tempeh. Can be served with two chicken fetuses (yuck!) or tofu scramble for no extra charge. Also served with a non-vegan biscuit, but you can sub toast (I got the rye toast and it was delicious!).


This was the man's tofu scramble and fried potatoes. He had the biscuit. How awesome do these dishes look?!






Rosemary-Infused Spaghetti Squash

This weekend, while I was at the grocery store, I couldn’t help but get giddy when walking through the produce section…all the squashes, apples, and all my favorite fall things were in abundance!! One thing I have discovered about grocery stores in Wisconsin which is unlike grocery stores in California, is that they try to have as much local and seasonal produce as possible, which is awesome, but I do start to miss certain things when they aren’t in season and aren’t being sold. So you can imagine my excitement when I was there on Saturday and saw an entire box of organic spaghetti squash!!! Woohooo!!!! My life was complete once again! I picked up a couple of these bad boys and immediately started planning in my head what I wanted to do with them. I used the first one last night, in celebration of Autumn, and couldn’t have been more satisfied! AND, at only 112 calories per serving, this was by far a low-cal and hearty meal that kept me full the remainder of the night! For those of you watching your waistline, this is definitely a recipe to add to your kitchen repertoire!

Rosemary-Roasted Spaghetti Squash

1 Spaghetti Squash, about 3-5 pounds, cut in half and seeded
1 ½ cups of Vegetable broth
2 large sprigs of Rosemary
2 large sprigs of Sage
2 Tblsp Extra Virgin Olive Oil
2 Tblsp Parsley
2 Cups chopped broccoli florets
1 diced tomato
S&P to taste


Preheat oven to 375. Pour broth into a 9- x 13-inch baking dish. Bruise rosemary and sage sprigs with the back of a knife and toss into broth. Arrange squash in dish, hollow sides down, and roast until rind gives easily when pressed and flesh is just tender, 35 to 45 minutes. (Be careful not to overcook squash since it will become too soft and soggy.) While squash is in the oven, lightly steam the broccoli. Set aside. Transfer squash to a large plate, hollow sides up, and set aside until cool enough to handle.

Using a fork, scrape squash out of rinds and transfer to a large bowl. Add oil, parsley, broccoli, tomatoes, salt and pepper and toss gently. Serve immediately.

The hint of rosemary that the squash soaks up is seriously perfect, and I don’t think I’ll ever cook spaghetti squash without it now!

Vegan-Friendly Airports

First off, I want to say thank you for all of the support with my beloved dog passing this past week. It was a really hard thing to go through, and receiving the support that I did from all over really helped. So, thank you all so much for your words of kindness.

I travelled from Wisconsin to Washington, D.C. this weekend to spend some much needed time with my mom, where we shared many happy memories of the friend we had to say goodbye to. This was also the first time that I have travelled via airplane since going vegan (I like to drive wherever I go since flying is rarely a positive experience for me…I’ve even driven cross-country to avoid airports!) and needless to say, I was quite nervous about what my food options would be. So, I have put together a little rating system, if you will, for the airports that I travelled through:
Milwaukee, WI: F
Detroit, MI: A+++
Washington, Dulles: D-
Minneapolis/St. Paul: A


I left from the Milwaukee, WI airport, and let me tell you, they FAIL the vegan ratings. I found one place in the entire airport that sold a “veggie southwestern salad”. This salad’s description listed cheese, but I tried ordering it without the cheese. The guy then proceeds to tell me that all of the salads are pre-made and that they actually have chicken on them, too, because “nobody wants a salad without chicken.” Ummm…really?! I asked if he could make me one, and he said that they don’t stock the ingredients. So, starving Danielle had to wait, and pray that I’d have better luck during my layover in Detroit.

Let me just say, I left work that day at noon, was not able to grab lunch before driving the 90 minutes to Milwaukee (we were going to grab food before the boy dropped me off, but a bad traffic jam caused us to run a bit late), and so I had only had a small bowl of oatmeal the entire day. It was now around 5:30 when I arrived in Detroit, and I honestly thought I just might pass out (my own fault for not packing snacks, I know…but my head was in outer space when I prepared for this quick trip). I walked off the airplane, and knew that I had entered the Vegan “Oz” of airports…there was literally restaurant after restaurant, more than I had ever seen in an airport, and as I read every menu hanging outside, I realized that every single one not only offered vegan and vegetarian options, but clearly labeled them as such as well!! I was literally drooling after about ten restaurants, and since I had a few hours, I decided on the Mediterranean Grill located at gate A54 (if I recall!). I was sat quickly, greeted quickly, and since I had looked at the menu posted outside, I knew what I was going to order and quickly ordered the falafel pita platter with dolmas (stuffed grape leaves). My food was out in record time, and I quickly dug in. The super spicy falafel was like heaven in my mouth. Tucked away in a perfectly toasted pita, and stuffed with hummus, tomato and lettuce, and of course, plenty of falafel. And to top it all off, I had four massive dolmas awaiting my stomach. Even with how famished I was, I could hardly manage to finish ¾ of my meal so I went ahead and took the bill…$8.49?!?! This couldn’t possibly be right. A nice, sit-down restaurant in an airport I already knew was going to set me back around $15-20. But, I managed to sit down, have a beautiful meal presented to me for less than ten bucks!! I was so happy, and am actually looking forward to the next time I get to travel through Detroit, as there were so many delicious looking places that I cannot wait to try!

On my way back, I left from the Washington D.C./Dulles airport. I honestly thought I’d be all set here, because, well, it’s a huge city, a massive airport, and I truly thought I would at least be able to find SOMETHING. Well, I was clearly mistaken. The ONLY think I was able to find was a mini carton of Silk Chocolate SoyMilk. I found this at a little coffee shop where I tried to get a plain bagel. The man at the counter asked what kind of spread I wanted on it, and I said I didn’t want any. He told me that the price includes it, and I said I don’t mind paying full price, but I don’t want any spread. I was told they couldn’t do this…what?! What kind of crazy rule is that?! So, after standing in line, I at least wanted something, so I picked up a carton of soymilk and bought that. Not too tasty (I hate anything with a milky texture, real milk or not), but it was something in my tummy until I got to my next destination.

I arrived in Minneapolis and was at first disappointed, as the only options I saw right away were the standard Burger King, McDonalds, and Starbucks. However, the closer I got to my next gate, the more options started popping up. I ended up eating at a little place directly at my gate called the French Meadow Bistro, as their foldout sign clearly exclaimed that their soup of the day was a Vegan Black Bean Chili. Obviously excited by the fact that they were so proud of their “vegan” chili, I stopped in. I took a look at their menu, and they had a plethora of vegan options, which were all organic as well. Yay! I ended up just getting an order of the chili, which came with a side of vegan sourdough and every single bite was a perfect little taste explosion in my mouth. Perfect. And at $4.95 for a cup and bread, it didn’t totally break the bank either.

My favorite thing about going to the Farmer’s Market each week, is that every week, there is always something new that is in season. This week, the market was flowing with all sorts of potatoes!! The best part, one farmer was so excited about this gorgeous white potato that he grew for the first time this year, he handed me five pounds, wouldn’t take payment, just told me to come back next week and tell him how they were! Well, this cocky farmer knew I’d be in love, because he now has a customer for life!! So, with my large bag full of goodies from the market, I went home and started putting together some delicious goods:



Salad with spray-free mixed greens, tomatoes, squash, and chickpeas – all from the Farmer’s Market. (Ignore the Jack Daniel's...it's the rocker in me, I can't help it!!)


Potatoes, chopped asparagus, 3 tsp. minced garlic, olive oil to coat potatoes, onion powder, popped in the oven at 425, taking out and shaking up a bit every ten minutes for 40 minutes. Potatoes and asparagus from the Farmer’s Market.



Sunshine Burger patty marinated in BBQ sauce, sliced tomatoes and pickles on whole grain pita with spicy hummus. Tomatoes and pickles both from the Farmer’s Market.

Cheap, delicious produce like this is the number one reason I freaking love summertime! And each week, it’s just gonna keep on getting better!

Check out those beautiful vegetables!!

So for all of you calorie-counter’s out there, I created this delicious, and super filling masterpiece last night! It’s quick, simple, colorful, and everyone will love it! And if they don’t, well, then it’s more for you!! I use a rice cooker to cook the brown rice, but if you don’t have one, just follow directions to cook basic brown rice.

Seitan Stir Fry (approx. 3 servings)
1 cup brown rice
1 yellow summer squash, chopped
1 roma tomato, chopped
1 ½ cups chopped broccoli
1 ½ cups green beans
1 cup sliced bell pepper (I used red, yellow and green)
2 cloves garlic
½ tsp crushed red pepper flakes
1/8 cup shoyu or soy sauce
1 package West Soy (or your favorite brand) Seitan (the “strips” work best)

Cook rice according to your rice cooker. When rice has approximately 15 minutes of cooking time left, combine all remaining ingredients in a large wok. Cook over medium high to high heat until seitan browns and veggies are cooked through. Put over rice, and enjoy!

Okay, so that is one of the easiest dishes you can make. The best part about it is it is so simple and fast to make, extremely filling and satisfying and it’s really low-cal! One serving is only 290 calories! Eating healthy never tasted so good!

First off, I want to thank people who took the time to read my last post, as it really is something that is truly important to me. I don’t want people to be offended or think that I’m one of those “crazy vegans” with a political agenda who walks around with a bucket of red paint. No, that isn’t me. I don’t get up and preach on platforms, and I’m not here to change anyone. But, I do like to educate, and I like to constantly BE educated. I think if we all sought out to learn one new thing a day, this would be a completely different world. But, I just want to say thank you for taking the time to read, and I hope maybe you learned something that is relevant.

Secondly, I am back with another delicious recipe that veg-heads and carnivores alike will love! Honestly, my fiancé asked me if I was SURE I didn’t use real meat, that’s how good this meal is at tricking the taste buds! It’s really simple, and all I did was take a look in the fridge, analyzed which foods needed to be used and took it from there! So without further adieu, I give you:

Spicy “Beef” and Tomato Gorditas with Steamed Squash and Quinoa
1 tomato, chopped
1 package Lighlife Smart Grounds (or ground beef replacement of your choosing)
Onion Powder
Vegan Hamburger seasoning (check the label to make sure there are no animal products. I use one by McCormick)
Buffalo Wing Sauce
Whole Grain Flatbreads
Squash of your choosing, sliced into rounds
1 cup quinoa
Thoroughly rinse your quinoa. Follow cooking directions according to the package, or use a rice cooker, like I did. Add 2 cups of water to the quinoa, and let the rice cooker do the rest!
(a small strainer is perfect for giving your quinoa a quick rinse)

While quinoa is cooking, put your “beef” in a large skillet with onion powder, hamburger seasoning and wing sauce (no specific amounts, just to your liking. I use a lot more hot sauce than the average person, so add according to taste). Cook until “beef” becomes slightly brown, and add in the tomatoes. Turn heat to low, and let the flavors simmer together.


Throw your squash into the steamer, and let steam for about ten minutes. Don’t do this until there is only about ten minutes of cooking time left for the quinoa, so it is fresh when it’s time to eat. (I highly recommend a rice cooker/vegetable steamer combo…they are truly awesome for the lazy cook…haha!)

Warm your flatbreads on a skillet over low heat, flipping until both sides are soft and golden. When my “beef” had about two minutes left to simmer with the tomatoes, I added this amazing chili vinaigrette that I got at the farmer’s market to it to give it even more spice, but you can add any type of additional hot sauce.
Scoop your “beef” and tomato mixture into your flatbread. Garnish with vegan cheese our sour cream if you’d like, but I prefer it without. Fold over like a gordita. Enjoy with your quinoa and squash!

This meal is super light for summer, yet packs a punch for anyone who is still having problems “converting” to non-meat dishes. It's also a super simple meal for those of you who say you are new to this and don't think you can cook! Trust me, if I can do it, anyone can! I hope you enjoy it!

What a weekend! It started off with Tornado Watches (something that we definitely didn’t have in Los Angeles!) and ended with beautiful sunshine! Not to mention, I got to head down to the Dane County Farmer’s Market, which is one of the largest ones in the country, apparently! This market was absolutely incredible!! What excites me is the fact that I know each week that we go, there will be so many different things to choose from, as more and more plants become in season!

My first stop was at a little stand that caught my eye with its “Vegan Pastries” sign. It was a small local bakery and so many things looked so delicious. I left with a Strawberry/Rhubarb safflower and sunflower seed pastry for a dollar, which was almost sinful! I didn’t get too much this time, as I had just gone on a trip to the grocery store and had some produce (plus there really isn’t too much produce this time of year…lots of plants and herbs and such, but not a lot of fruits and veggies ready to be sold), but did leave with some awesome pickled vegetables, some hot pepper vinaigrette fresh from the farm, and more tomatoes than I know what to do with!


I couldn’t help myself; they were the size of grapefruits and smelled so good! We got four pounds of these delicious tomatoes, and with my pastry and my man’s scone and all our other purchases, we didn’t even spend $10! And people say that eating healthy is expensive?!?! I beg to differ!

Afterwards, we ventured over to the restaurant that is reviewed in my previous post, The Green Owl Café, and had an amazing lunch. I got the BBQ Jackfruit Sandwich (which honestly tasted just like pulled pork!) with the Kale Chips, and Julian got the “Crab Cake” Po’boy Sandwich with Kale Chips, which is his favorite meal on the menu. We ended up halving our sandwiches so we could each have half of the others, and both were so delicious. The meal was topped off with vegan, gluten-free Coconut Cream Pie for Julian and vegan Marshmallow Mud Pie for me. What a perfect meal!
